Serves 4
- 1 tbls coconut oil
- 1 pound ground turkey
- 1 tbls taco seasoning
- 8 taco shells
- 2 cups salsa
- 2 avocados, sliced
- 2 cups green cabbage, chopped
- 8 cups mixed greens
- 2 cups purple cabbage, chopped
- 1 cup carrot, shredded
Tahini Cucumber Dressing
- 1/2 cup tahini
- 2 lemons, juiced
- 1 large cucumber, roughly chopped
- 1 garlic clove
- 1 tsp cumin
- sea salt to taste
- black pepper to taste
SAUTÉ TACO MEAT. Melt coconut oil into a large pan over medium heat. Next, add the ground turkey. Break the meat up with a spatula so that it crumbles. Season with taco seasoning and mix well. Continue to sauté for about 7 minutes until the meat is no longer pink. Set aside to cool.
ASSEMBLE TACOS. Place taco shells on plates. Place salsa, avocado, and green cabbage in small serving bowls to be used as toppings. Assemble tacos with taco meat and desired toppings when ready to eat.
ASSEMBLE SALAD. Place the mixed greens, purple cabbage, and carrot in a bowl. Mix well. Add the dressing ingredients to a high-speed blender and blend until smooth. Pour over the salad. Serve salad with tacos.
